Well, here goes nothing! I am a known writer, but I don't know how well I'll be at this whole blogging thing. Hopefully I can provide some insight to the world of a school counselor, but if all else fails- hopefully you'll be entertained!
As the year winds down, I am in the process of wrapping up my group and individual meetings. Since I started on April 6th, I have created four groups. Three are for Changing Families, and one is for Friendship. I promised the kiddos in the groups that I would bake treats and bring them in for our final meeting. I love to bake, and I was excited to have a reason to try a new recipe. Of course, I didn't follow the recipe that I found on Pinterest. Instead, I used one from the Pillsbury website that seemed a lot easier! First mistake. While making the recipe, I adjusted it from a 9x9 pan to a 9x13 pan and doubled the recipe. Second mistake. Next, I had to mix the cream cheese, sugar, and egg together to make the filling. Because the mixer beaters were in the dishwasher, I mixed it by hand and left some of the cream cheese in clumps. Third mistake. And finally, I put all of the ingredients in the pan and put it all in the oven at the same time without partially baking the bottom cookie layer. Fourth mistake. Fortunately I decided that they might not turn out okay and planned to get up earlier in case I had to do a Pick 'n Save run. Good thing I did, because when I tried to dish up the bars in the morning they were a mess. Yummy, but a mess! Instead I bought some bakery cookies and those yummy round sugar cookies with frosting. I don't think my kiddos will mind :).
